Although carefully designed by human hands, the garden possesses a beauty that feels like gazing upon a work of natural art.
Opened in April 2022, Nicolai Bergmann Hakone Gardens was created by clearing a stretch of untouched forest nestled within Hakone’s ancient woodlands. While the design reflects a sophisticated, urban sensibility, it was built with a deep respect for the natural environment. To achieve this balance, Nicolai Bergmann spent years shaping the vision himself, carefully bringing it to life with his own hands.
One of the most striking features of the garden is the collection of glass pavilions dotted throughout the grounds. Each one hosts seasonal displays and floral installations, and simply wandering through the expansive 28,000-square-meter space feels like stepping into a fantasy world.
The walking paths offer a subtle sensory experience as well. Instead of traditional pavement, the trails are lined with chips made from dried bamboo grass and pampas grass, all materials chosen to help maintain the forest while adding to the natural feel. With each step, a soft texture and earthy fragrance surrounds you, offering a quiet reminder of the garden’s thoughtful relationship with the land.

From June to September, the gardens come alive with hydrangeas, Nicolai Bergmann’s favorite flower. Around 3,000 potted plants bloom in a stunning array of colors, from crisp whites and fresh greens to vibrant pinks and deep purples.

By mid-July, the hydrangeas lining the 150-meter walkway and main path are in full bloom. As the season shifts from late summer into autumn, the flowers gradually fade into soft, antique tones. Set against the rolling hills of Gora, the landscape feels like a poetic celebration of the hydrangea’s quiet beauty.

Another way to enjoy Nicolai Bergmann Hakone Gardens is with a laid-back, grown-up picnic. The on-site café, NOMU hakone, offers complimentary picnic basket rentals, so you can grab a mocktail and a sandwich to go, then find a favorite bench or pavilion to relax and soak up the forest atmosphere.
This summer’s seasonal mocktail, the Blue Hydrangea, is a must-try. Inspired by the flower itself, it’s a refreshing blend crafted by the Danish chef, featuring house-made barley tea, locally foraged mugwort from Hakone, blue curaçao, and lemon. If you’re in the mood to experience hydrangeas with all your senses, a summer visit to Hakone might be just the thing.
